In 2020, I joined the team of neighbourhood Spanish restaurant Trangallan to help them navigate and reposition themselves during COVID.
When the pandemic struck back in March 20, they hustled. In lockdown their neighbours asked us them to make them up some veg boxes. So they listened. A few veg boxes turned into a daily market table, which turned into takeaway paellas, which turned into a market menu powered by Natoora.
After 9 years serving fine-dining in Newington Green they became a simpler version of themselves, Tranga was born. I helped them facilitate this process of stripping back and getting organised to start the new chapter of their business, in a very crazy time.
It was nice to only to help with marketing, brand and systems but also amazing to roll up my sleeves and actually get back out serving and interacting with customers. We sometimes as Marketers see customers as just followers or a number in a database rather than living, breathing, experiencing people. It was nice to get back to the roots of where my obsession for hospitality started - on the floor and in the kitchen.
Also, working incredibly closely with nerdy, kooky people obsessed with food and drink again was a real pleasure. I have learnt an incredible amount from the team there.
